Episode 10, titled ‘Bruno’s,’ features the titular eatery in Lafayette Hill, Pennsylvania, which is an old-school family-style diner that once was a beloved local gem. However, the owner, Tim Bruno, is reluctant to modernize the decor or even the kitchen, which is pushing the restaurant to the verge of collapse. Although they have their loyal customers, the new ones are slipping away. Gordon quickly realizes that if something isn’t done sooner, it may lead to lesser profits with every passing day.
The Owner’s Refusal to Evolve With Time is Pushing Bruno’s to the Brink
Bruno’s Restaurant is located in the heart of Lafayette Hill, Pennsylvania. The owner, Tim Bruno, opened his doors for the first time on January 16, 1989, because he always wanted to get into the food business and create something of his own. With no formal chef training, he only knew how to prepare a salad and taught himself to cook. Although Tim admits he is a sloppy cook, he proudly refers to it as “good sloppy.” Even after 36 years, the owner still runs the restaurant on his own, with his son, Nick Bruno, only serving as the Cook and Manager. He is a former history student and decided to stand beside his role model, his father, to help him carry the eatery into a new era.
Nick has poured himself into working for Bruno’s for around a decade because he finds its legacy deeply meaningful. Another part of the tight-knit family is Brie Kotana, who has been Nick’s girlfriend for around five and a half years. Since she grew up without a stable father figure, she considers Tim to be one and sees him, Nick, and the restaurant as her second home. Then there is the server Annemarie Maletta, who has worked at the eatery for 24 years and sees Tim as an older brother. Helping her in the front of the house is another server, Jenn. Although Nick agrees that they have loyal customers who have been visiting since the early days, he reveals that they usually see only five or six full tables now, even on their best days.
Nick knows that the food they serve is outdated, and his goal is to take over Bruno’s, but Tim hasn’t spoken much on the matter. Brie notes that the father and the son often bicker in the kitchen, but the frustration comes from Nick because his father is quite stubborn. She also feels that the eatery’s future is worrisome because its current sales do not help her pay the bills properly. Annemarie shares the same feelings that Bruno’s now needs something new to bring more people in because the old customers won’t be there forever. The once-beloved neighborhood restaurant currently teeters on the edge, with guests thinning out and no new customers in sight. If something doesn’t change soon, it may be forced to shut its doors for good.
Gordon’s Inspection Unveils Concerning Hygiene Issues and Outdated Practices
The episode begins as Gordon sneaks into Bruno’s at night to conduct his undercover inspection. He first checks the basement, where he immediately spots a dead mouse and piles of junk stuffed into the dark corners. Inside the dining room, he examines the aging booths and lifts one of the seat cushions, revealing layers of dirt and debris beneath. It includes a gift card that expired in 2004, clearly showing that a deep cleaning hasn’t happened in the restaurant in years. In the front kitchen, Gordon finds every surface covered with dirt and grime, and the grill’s grease trap is overflowing with old, crusted food. The chef finds a dirty milkshake machine and takes a swab sample to later examine it under the microscope. Gordon is shocked when he finds grayish ground beef, which is stored openly in the fridge at the back kitchen, and a plastic-covered container with blood spilled on it.
The following morning, Gordon returns outside the restaurant in a van and watches the staff through the cameras set up at the restaurant, which they believe is for a fake show called ‘Restaurant Refresh.’ The chef watches in disbelief as Tim cooks on the grill filled with burnt residue and grime. He also notices him using a spatula to scrape the gutter of the grill and then resuming cooking with the same utensil. What’s worse is that it is happening in the full view of the customers since Tim is cooking in the front kitchen with the open layout. He also observes a total breakdown in communication in the kitchen and a disorganized system due to handwritten orders. Right after, he checks the swab sample from the milkshake machine under the microscope, only to find live bacteria. Gordon is further baffled when he notices the grayish ground beef from the night before being cooked and served to customers.
To dig deeper, Gordon sends in two secret diners: ‘Hell’s Kitchen’ season 3 winner and restaurant entrepreneur Rock Harper, and ‘Hell’s Kitchen’ season 22 finalist and renowned private Chef Sammi Tarantino. The chef asks the latter to pose as a vegetarian in front of the staff. When Sammi orders mozzarella sticks and they arrive with meatball sauce, she asks for clarification if the sauce is entirely vegetarian. When Brie apologizes that it was meatball sauce and quickly changes it, Rock points out that it should’ve never made it to the table in the first place. Meanwhile, Gordon watches in horror as the eggplant dish Sammi ordered was grilled millimeters away from raw meat. Both diners taste their meals and inform Gordon that they taste like they were cooked on the same grill. Mentioning that he has seen enough, Gordon finally storms into the restaurant and asks the customers to leave.
Gordon Transforms Bruno’s by Helping the Owner Pass the Torch and Restore Standards
Gordon gathers the restaurant staff and reveals that he has been watching them and has an insider who gave him valuable information. When he quickly mentions how much the restaurant is in a crisis, Nick immediately grows defensive. The tension rises as Gordon points out the use of dirty spatulas, disorganized and outdated systems, and the hygiene issues. To prove his point, he performs an Adenosine Triphosphate (ATP) test on the fridge handle to detect contamination. While a safe reading is 30 or below, the number returns as a staggering 2358. When Gordon demands to know when the kitchen was last cleaned, Tim admits that it hasn’t been cleaned in years. He shows the team the dirty milkshake machine and is further horrified to learn it has never been cleaned. Tim confesses that he is losing interest in his growing age, and Nick should take more charge.
However, when Gordon inquires of Tim if he has talked to Nick about the same, the owner denies doing so. The chef makes it clear that Tim must show determination and stop avoiding hard decisions. Shortly after, he instructs the staff to clean the restaurant and asks Tim and Nick to meet him the following day. Knowing that the father and the son bond over baseball, the chef invites them to Miles Park to play the sport. When he tries to have an open conversation to urge Tim to hand the reins to Nick, the owner refuses to listen, adding how upset he is about Gordon’s actions the previous day. To help him understand, Gordon brings in two baseball legends, Milt Thompson and Larry Bowa. The former players reveal to Tim the difficulty they faced while becoming coaches. Finally, the owner understands their perspectives and expresses readiness for change. Meanwhile, Gordon’s team gives the restaurant a much-needed industrial cleaning.
Although Gordon’s team retains the classic diner feel, they change the wallpaper with a modern but nostalgic design. They also install a new POS system, bringing Bruno’s into the digital age. Moreover, the chef introduces them to a fresh and shortened menu. Gordon then urges Nick to step up and take the kitchen’s helm. The chef recognizes his passion, and since Nick lacks culinary training, he steps in to teach him kitchen techniques and prepare him for the new role. When the time for the insider reveal arrives, everyone is shocked to discover that Brie was the one all along. However, Nick and Tim do not miss a beat in expressing their gratitude towards her for helping the restaurant. As the restaurant relaunches, Gordon watches proudly as Nick finds his voice and works side-by-side with Tim. Before bidding goodbye, he encourages Nick, saying Bruno’s future is exceptionally bright.

The eatery remains open seven days a week, from 6:30 am to 9:30 pm. They proudly offer their customers breakfast, lunch, and dinner in a welcoming space that blends classic charm and modern sensibility.
Guests can choose to enjoy their meals at the vintage-style counter, nestle into their old-fashioned booths, or sit outside on their beautiful patio, which overlooks a park. Bruno’s currently takes pride in serving food made from fresh, high-quality ingredients and offering genuine hospitality. In March 2025, the restaurant team made its official post-transformation announcement, celebrating the relaunch.
