Season 1 of Fox’s ‘Gordon Ramsay’s Secret Service’ brings struggling restaurants to the forefront, where the renowned chef finds out what holds them back. In episode 13, titled ‘Neighborhood Kitchen,’ he steps into the titular restaurant, which began as a future plan but now teeters on the edge of collapse. Mark and Lisa Moon launched the eatery to create a place where people could gather to get fresh food in an inviting atmosphere. However, with no prior experience in the restaurant industry, they find themselves overwhelmed by the harsh realities of the business. The restaurant desperately needs to overcome the mounting debt, operational issues, and the looming fear of closure.

The Owners’ Risky Investment and Inexperience Put the Neighborhood Kitchen at Risk

The Neighborhood Kitchen is located in the heart of Whitinsville, Massachusetts, and was launched in 2021 by the couple, Mark and Lisa Moon. They have been married for 45 years and never imagined themselves in the restaurant business until this. Mark and Lisa originally took over a bowling alley named Sparetime Recreation in 2019 because the former wanted a hobby. However, he quickly decided they also needed to expand into food service. Although Lisa didn’t want to own the bowling alley and the eatery, Mark convinced her to join him. Hence, she decided to give it a shot, and the restaurant is currently situated right beside the alley. Lisa initially worked at a hospital and retired when she turned 62. Lisa has $401K worth of funds, and they have been gradually using money from there.

Working alongside Mark and Lisa is Dave, the Head Chef, who actually met Mark at the bowling alley. Although Dave has no formal culinary experience, he agreed to take on the role with the promise that he would try his best. Another staff member of the kitchen is Matt, who serves as the Line Cook. Last but not least is JP, who is a bowling alley employee. Despite Mark’s initial vision for the restaurant, he used to spend 12-13 hours a day working tirelessly for his two businesses. However, he had a heart attack two years back, when he had to get Quadruple bypass surgery. Despite that, Mark continues to work the same hours but admits that the eatery is not profitable. He reveals that they are losing nearly $3000 each month. Neither he nor Lisa has any experience in the restaurant industry.

Mark’s relentless work only makes Lisa fearful for his health since he had major surgery. She reveals that she has a 401K worth of funds, and they have been gradually withdrawing money from it. It has turned out to be a point of contention between the duo. She discloses that they have fallen behind on tens of thousands of dollars in federal taxes. Lisa is growing worried every day about losing their house if the restaurant fails. JP also feels that the business is declining and that the staff doesn’t have proper direction. Matt thinks that sometimes the waiting time for the food to get delivered to the customers becomes longer since Mark constantly runs back and forth between the bowling alley and the restaurant. Unless the team quickly brings change and the kitchen finds its footing, the restaurant may soon have to close its doors to customers.

Gordon Uncovers Hygiene Issues and an Overworked Owner at the Neighborhood Kitchen

The episode begins in the middle of the night with Gordon sneaking into the Neighborhood Kitchen. As he enters the kitchen, he detects a foul odor and traces it to a bag of rotten carrots. Upon further inspection, he uncovers pieces of turkey in storage. However, he notes that they have unnatural colours, indicating spoilage. When he peers beneath the kitchen equipment with his snake cam, he finds a shocking buildup of old food debris. He also notices that the stove burners are dirty with grease. Gordon is shocked to find that the cooking stations are layered with grease so thick that it can be scraped off with a knife. He realizes that it indicates the kitchen hasn’t been cleaned properly for a long time. He then takes a swab from a tortilla container, where the green color result means safe, pink is a warning, and purple points to a disaster. When the swab result turns purple, Gordon is left completely baffled.

Gordon becomes disappointed when he enters the dining room and finds outdated furniture, dulling the place. By morning, he is back again in his van parked outside the restaurant. He watches the restaurant’s business hours through the surveillance cameras. The staff believes they have been installed for a show, ‘Restaurant Refresh.’ Gordon watches Mark, who had a major heart surgery, sprinting back and forth between the bowling alley and the restaurant to keep things running. At one point, two customers walk in, but he observes that no staff members go forward to greet them. The chef watches in shock as Mark throws something off the sidewalk using his hand and doesn’t wash it. The owner then goes into the eatery and holds the customer’s food plate with those same hands. In the bowling alley, Gordon notices that the customers are eating their food right on the counter, where they keep the bowling shoes just a little distance away.

Gordon then sends in ‘Hell’s Kitchen’ season 3 winner and restaurant entrepreneur Rock Harper, and ‘Hell’s Kitchen’ season 22 finalist and renowned private Chef Sammi Tarantino as the secret bowlers to the alley. As Rock distracts the staff with Gordon’s instruction, Sam secretly takes a swab of the counter. She brings it to Gordon for an ATP test, which gives a 1979 score. It is unsafe because while a 30 score is safe, 90 is usually dangerous. To get a better understanding of the food taste, Gordon orders dishes for himself. Gordon finds the shepherd’s pie quite bad in taste, the hot dog tasteless, and the burger lacking in flavor. He alarmingly discovers Matt cooking the tortilla from the previous night with a spatula and using the same one to handle raw meat, which can lead to cross-contamination and cause food poisoning. Gordon finally storms into the dining room and asks the customers to leave, stopping the service.

Gordon Separates the Bowling Alley From the Kitchen and Restores the Owners’ Focus

Gordon gathers the owners and the staff and reveals that he has been secretly watching them. He adds that he also has an insider who gave him information about the eatery. Turning first to Dave, Gordon states that the kitchen is dirty and unhygienic. He brings out the rotten carrots and points out that the shepherd’s pie was unappetizing when Dave tries to refer to it as “a little salty.” Mark jumps in, insisting that he wants to take the blame for everything and even asks Gordon to direct his anger at him. When pressed about the food, Mark confidently claims it’s at least an 8 out of 10, but it leaves the chef shocked at his denial. Gordon asks him directly if the restaurant is his hobby, just like the bowling alley. Mark insists it is his retirement plan, but the chef tells him that his family is not in good shape, and he is in denial. The tension escalates as Mark walks off into the kitchen, and Gordon follows him soon after.

Gordon reminds Mark that the latter’s health and Lisa’s future security are on the line. He urges the owner to understand his mistakes and asks him to hold his staff accountable. He then asks everyone to leave the room to speak privately to Mark and Lisa. Gordon tells Mark to stop being stubborn and separate the restaurant and bowling alley operations. He even states that he cannot help them if Mark is unwilling to change. When Gordon goes to his van, Lisa confesses that she worries about Mark’s health. She adds that if the restaurant goes on like this, it will be in jeopardy. Shortly after, Gordon sits with Mark for a heart-to-heart conversation and insists that the latter needs to work smarter and not harder. The owner admits that he does not want to fail, and he is ready for change with Gordon taking the lead.

Gordon’s team gets to work and transforms the restaurant into a homely and intimate style. Besides new kitchen equipment and a deep clean, the chef’s culinary team provides hands-on training to the restaurant’s kitchen staff. When Gordon unveils the new menu, it leaves the owners and the staff quite impressed. Ultimately, it is revealed that Lisa has been the insider the whole time. It prompts Mark to note that he is grateful she sought help to save their future. During the relaunch, Gordon happily watches JP taking the food from the restaurant and the bowling alley, eliminating Mark’s load. Gordon comes in to learn that the customers are happy with the food. After bidding goodbye to Lisa, Gordon joins Mark for a bowling game and tells him that this is where he should come to relax, and his entire focus should be on the restaurant.
