Fox’s ‘Kitchen Nightmares’ chronicles Gordon Ramsay’s visits to the eateries that face problems holding them back, and the chef focuses on offering them the chance to transform their business. In season 10, episode 11, titled ‘Wick ‘n Ore Kitchen & Tap,’ the focus shifts to Wick ‘n Ore Kitchen & Tap, a restaurant in Vernon Hills, Illinois. With decades of service under its belt, the restaurant’s identity is built around a distinctive mining-themed atmosphere while serving comfort food. As the team struggles to appeal to diners without a clear sense of direction, it faces the difficult reality of losing customers. With no solutions in sight, the owner turns to Gordon for much-needed help.
Wick ‘n Ore Kitchen & Tap Struggles to Attract Younger Diners Amid Mounting Debt
Wick ‘n Ore Kitchen & Tap traces its roots back to 1973, when the original owner opened the restaurant under the name The Claim Company. The establishment began with a mining-inspired theme that became part of its identity. Eventually, the owner was unable to run the restaurant, which led Michael Holleb to take over as the new owner. Following that, he relocated the eatery to Vernon Hills, Illinois, and gave it the new name, Wick ‘n Ore Kitchen & Tap. Hoping to make diners feel at home, he envisioned a restaurant where good food and warm hospitality could come together in a sophisticated yet cozy setting.

Even after relocating, Michael retained much of the original mining-theme decor. However, the restaurant’s customer base largely consisted of older diners, despite Michael’s desire to attract a younger generation. Its menu reflected the attempt to cater to different tastes, featuring everything from Mexican to American dishes. With 87 items on the regular menu, excluding the specials, the kitchen faced an overwhelming workload. The head chef, George, revealed that although he had repeatedly urged Michael to reduce the menu, the owner had refused.
The rest of the staff includes the hostess, Kaitlyn, and the servers, Shey, Gail, and Hannah. Michael felt that their food lacked proper presentation, which might have been one of the reasons for the younger generations’ lack of presence. He also noted that although George executed everything on the menu seamlessly, the head chef often grew frustrated because the owner kept adding new items. The rest of the staff believed that Michael struggled to admit that he was wrong. Ultimately, the owner disclosed that the restaurant was not making any profit and that he was around $231,000 in debt. With the situation growing difficult to manage, he finally turned to Gordon Ramsay for help.
Gordon Uncovers Poor Food Quality and Lack of Direction at the Restaurant
When Gordon finally steps into the restaurant, he quickly learns that the guests consist primarily of families and older diners. During his first conversation with Michael, the latter explains that he became the owner after roughly six weeks of preparation. However, Gordon is surprised to learn that the owner has recreated the previous concept without making any significant changes, even though it was struggling. Michael admits he made the decision because he lacked experience. While ordering his food, Gordon realizes that the menu is extremely large. Once his food arrives, his concerns continue to grow as he finds the soup watery, the quesadilla with very little chicken, and the burger patty quite dry.

Gordon is also unimpressed with the taste of the salmon and mozzarella sticks. Once the service concludes, he gathers the staff and says he is disappointed with the restaurant’s unwelcoming atmosphere and food. When he asks George, the head chef admits that he has repeatedly asked Michael to remove items from the menu, but the owner refuses to listen. Gordon also realizes that the eatery needs a clear identity to distinguish itself. His concerns grow when he learns that the salmon he was served was precooked. Michael explains that the approach is intended to reduce service times. Although he praises George for his diligence, Gordon points out that the owner may be taking advantage of the head chef’s dedication.
Convinced that the restaurant is beginning to fall apart, Gordon decides he needs to see what Michael’s life looks like away from the restaurant. Therefore, he visits the owner’s wife, Nora, at their home. There, she reveals that her husband is always present at the eatery and has missed several important milestones in his children’s lives. She further adds that she rarely sees him, and his absence has taken a toll on their relationship. Despite everything, Nora still believes in Michael and hopes he will turn things around. Gordon then encourages her to be completely honest with the owner about how his choices have affected their family.
Gordon’s Encouragement Helps the Owner Give the Eatery a New Start
As the dinner service gets underway and customers begin filling the restaurant, Gordon heads straight into the kitchen to observe the team in action. He is immediately struck by George’s work ethic, noting that the head chef moves quickly and takes on an enormous amount of responsibility. However, it soon concerns Gordon when he learns that the head chef has only taken a vacation once, after his mother passed away. This prompts Gordon to ask Michael what will happen if the head chef needs time away. As the service progresses, customers begin to question the eatery’s identity and complain about the food’s taste. Upon checking the walk-in freezer in the kitchen, Gordon is shocked to find an immense amount of precooked food.

It ultimately prompts Gordon to stop the service and confront Michael, telling him the restaurant is out of control. The chef also emphasizes that the owner is reluctant to accept the changes. During a private conversation, Michael confesses that he doesn’t want his eatery to operate this way. Eventually, Gordon urges him to take responsibility for his mistakes, stop making excuses, and step up as the owner. Moreover, the chef insists that the owner should go home and spend some time with his family. In the meantime, Gordon’s team completes the restaurant’s transformation with updated decor and furniture. The kitchen is also revamped to create a more efficient work environment.
When Michael and the staff see the transformation, they are left stunned. Gordon then unveils a shortened menu featuring 15 items. For the relaunch, he invites a few local food influencers to help attract new customers. As the guests begin trickling in, Gordon encourages Michael to interact with them, but soon notices that the owner is not comfortable at the front of the house. Although the kitchen briefly falls behind, the team quickly catches up. Customers respond positively to the new menu, praising its delicious taste. Before leaving, Gordon once again tells Michael to take care of himself and make time for his family. Five months later, the owner reveals that the eatery is performing better, and the staff has adjusted well to the changes.
