Located in Chicago, Illinois, Borelli’s Pizzeria was established in 2013. Mark and Lisa Borelli had purchased a building, and she first started a music school on the first floor. Soon, her husband realized he could turn his experience preparing food at home into something more, paving the way for him to open the restaurant. Their daughter, Elise, had been working at the eatery since she was 8 years old and eventually became a server. Mark had also decided to give young people opportunities, with the restaurant’s staff largely consisting of teenagers.

The team includes cooks Henry, Frank, and Baden, and servers Elise and Ella. Mark’s staff considered him a community-minded person, but they felt that he had failed to put a proper system in place at the restaurant. Additionally, Elise felt that they were understaffed and overwhelmed. Many of the young employees were assigned their work without proper training, leaving them unsure of how to handle the demands of the restaurant. It left them feeling that Mark’s management style was not fruitful.

Although Mark was deeply involved in the day-to-day operations, the staff considered him a source of stress in the kitchen. When things didn’t go as planned, he often became stressed and went to the basement. The restaurant had begun to lose money, leaving the owners with approximately $750,000 debt. The stakes were high because if the restaurant closed, Lisa would also lose the music school upstairs. With both family businesses hanging in the balance, they finally contacted Gordon for his assistance.

Gordon’s Evaluation Exposes the Disorganization of the Management

When Gordon Ramsay arrives at Borelli’s Pizzeria, he notices that the pizzas are surprisingly expensive. Upon tasting his ordered items, he points out that the mozzarella sticks are likely frozen and deep-fried. Moreover, he notes that they have an unpleasant smell. When he asks a staff member about the smell, he discovers it may be due to the fryer oil, which hasn’t been changed for about two weeks. Gordon then notices that the pizza dough is too thick and the wait time is too long. Once the service ends, he gathers Mark and the staff to inquire why the pizzas are so inconsistent. Soon, the chef realizes that the co-owner is overwhelmed by the lack of a clear operating system. To further assess the restaurant’s operations during the service, Gordon stays to observe the next service. However, shortly before the opening, Mark accidentally spills the fryer oil across the floor, costing the staff valuable preparation time. As customers begin to arrive, Gordon notices that Mark’s disorganization is affecting the kitchen, leaving the staff unable to keep up with incoming tickets. The chef is also left baffled when the co-owner discloses that the dough is partially pre-cooked to reduce the preparation time.

Moreover, Gordon discovers that Mark is not using both shelves of the pizza oven, which is increasing customers’ wait times. The chef also notices that something is seriously wrong with the way Mark is acting. To better understand, Gordon speaks with Lisa, who explains that the eatery has been her husband’s dream and that she believes he needs proper direction. The situation takes a concerning turn when producers pull the chef aside and show him footage of Mark going downstairs to drink alcohol. When Gordon confronts him, the co-owner denies drinking heavily. Unable to watch the chaos, the former finally asks Elise to stop the service.

Gordon’s Intervention and Mark’s Resilience Help Borelli’s Pizzeria Move Forward

After stopping the service, Gordon takes Mark downstairs and confronts him with the footage showing him drinking during the restaurant’s operation. The chef promptly urges the co-owner to stop drinking. Mark eventually confesses that he has an alcohol addiction, explaining that he has been trying to cut back but finds the stress of running the restaurant overwhelming. Gordon urges him to “get clean,” and the following day, he takes Mark to his first session of a sobriety program. Back at Borelli’s Pizzeria, his team focuses on transforming the eatery.

Gordon ultimately gathers the rest of the staff, introduces them to a new menu, and provides them with much-needed training so they can operate the eatery without relying on Mark. When the changes are finally revealed to Mark, he is left impressed with the new, modernized decor and kitchen equipment. Gordon also presents him with the new menu, which receives immense praise. During the relaunch, Mark takes charge of the front of the house while the rest of the staff focus on their roles in the kitchen and serving duties.

The pressure soon builds as orders pile up and customers are left waiting. Gordon steps into the kitchen and reminds the team to slow down, focus on consistency, and maintain the standard for every dish served. As the kitchen staff gradually find their rhythm and customers begin praising the food, Mark focuses on interacting with the customers. Seeing Borelli’s Pizzeria operating more smoothly, Gordon says goodbye to the co-owners, hopeful that the changes will last.

Borelli’s Pizzeria is Making a Mark With Live Music and Delicious Food

Located at 2124 West Lawrence Avenue in Chicago, Illinois, Borelli’s Pizzeria experienced tremendous success within three months of Gordon’s departure. The staff has stepped up, allowing Mark to relinquish some control and spend more time with his family. Currently, the restaurant maintains a website where customers can learn more about their story, menus, and upcoming events and community activities. The site also allows guests to reserve the space online for private events.

Borelli’s Pizzeria operates as a BYOB restaurant, inviting guests to bring their favorite bottle of beer or wine, which the staff will gladly serve. Throughout 2025 and 2026, it has continued to welcome performers for live music nights and community gatherings. In November 2025, it hosted an event, Banjo Astro After Dark, featuring Dr. Luke Leisman and songwriters like Jon Goldfine and Aaron Eddy. By April 2026, the eatery announced that customers would be able to watch four NFL playoff matches at the establishment. Shortly after, the banjo player, Jonas Friddle, entertained the guests with his creations.

In that same month, Borelli’s Pizzeria collaborated with The Garden to host a community-based event. It was followed by the celebration of International Jazz Day at Borelli’s Pizzeria with a performance by the jazz band, Horner Park. By May 2026, the restaurant hosted a celebration for Cabaret Week in Chicago, and tickets were available in advance. The following month, Borelli’s Pizzeria hosted a live music night featuring Windy City Jammers. As of writing, the restaurant holds a 4.5-star rating on Google with more than 236 reviews praising the food, updated menu, and remodeled interior.
