Each task is crafted to test not only their culinary expertise but also their ability to accept feedback, adapt quickly, and take risks rather than play it safe. In its debut season, London Chase excelled across all these areas, consistently rising to the occasion. While some viewers initially struggled to understand his creative process, London proved his approach was effective. He impressed the judges and earned his place in the competition. His steady performance ultimately kept him in the running all the way to the semi-final.
London Chase Didn’t Hesitate in Taking Chances at Every Step
London Chase’s journey on the season was filled with bold choices and a unique approach to cooking that intrigued both judges and viewers. They referred to him as the “mad scientist.” From the very first challenge, where a few contestants were tasked with creating a dish inspired by the legendary Paul Bocuse, London’s creativity began to shine. His ability to draw from classic techniques while adding his personal twist secured him a place in the top 12 contenders early on. In the second round, London hoped to be placed on the Asian cuisine team, as he had long been fascinated by its versatility. Though he had never cooked with a tandoor before, he took the leap and created a glazed lobster with tamarind curry and lentils cooked in the tandoor. The risk paid off, earned him his first pin of excellence, and cemented his status as a chef willing to push boundaries.

One of London’s most notable moments came during the brewery challenge. Tasked with managing the steaks, he handled nine steaks and two burgers simultaneously, showing impressive focus and control under pressure. Even though the team ultimately failed the challenge, the judges praised London’s ability to stay organized and deliver consistency. For the semifinal fine dining challenge, he made a dish featuring salmon with mushrooms, mixed vegetables, squash, mussels, and a Thai-inspired sauce. His aim was to break away from the rigid structure of fine dining and highlight global flavors. While the judges commended his creativity and execution, they ultimately felt the dish was too simple for a finale-level challenge. This led to his elimination in the semifinals, but London left the competition having proven his skill and creativity.
London Chase is Taking His Culinary Venture to New Heights Today
London Chase’s professional journey after the season has been both ambitious and inspiring. He was working as a Junior Sous Chef at Essential by Christophe in New York City, where he honed his technical skills and refined his palate under the guidance of experienced chefs. The role taught him the importance of balancing eccentric creativity with discipline. Working in a high-pressure, Michelin-level kitchen gave London the foundation he needed to take the next big leap in his career.
That leap came when London co-founded Mango Bay NYC, an Afro-Caribbean restaurant in Brooklyn, alongside partners Shamah Levy and David Berkowitsch. As Executive Chef, he has made Mango Bay a culinary destination known for dishes like jerk chicken, braised oxtail, and plantain-based small plates that celebrate the flavors of the Caribbean while adding a modern, elevated twist. The restaurant is more than just a dining space as it is a cultural hub that integrates food, music, and art to create a truly immersive experience.
In May 2025, London and his team hosted an event called Plate & Palette, which combined gastronomy with visual art. The event featured an exclusive tasting menu curated by London, alongside an exhibition of works by artist Adrielle Le Belle. Guests received collectible, artist-designed plates as part of the experience as well. Beyond the kitchen, London is deeply involved in New York’s creative community. He is associated with the Art Department, a studio collective, and often collaborates with local artists to bring fresh perspectives to Mango Bay’s events. Leveraging social media, he has also launched his own food-focused page where he shares recipes, behind-the-scenes content, and cultural commentary.
